Nestled in a residential area near Ginza in Tokyo, Sushi Hashimoto became the new sushi spot among locals since its inception in 2014. Sushi Hashimoto inherits the essence of edomae style sushi while exemplifying his sushi with his own interpretation on aging techniques.

ABOUT THE CHEF

Hiroyuki Hashimoto followed in his father’s footsteps to become a sushi shokunin since he was a little boy. As a rising star who shows huge potential in the industry, he has a stunning resume, which includes 9 years of training in Miyakozushi, one of the famous sushi restaurants in Tokyo, before he opened his own restaurant in Shintomicho.
